Lauren Stevens
Co-Owner, Director of Business Operations
Her order is the loaded bagel (sometimes with lox, sometimes without), on an everything bagel.
In store, Lauren manages the business & store side of things. This involves a lot of behind the scenes paperwork, but also training the staff, coordinating with vendors, and keeping our inventory fresh, fun, and organized. More than that, she’s always interested in learning new systems and techniques to make everyday work more efficient.
Outside of work, she can be found mothering their twins, working in the garden, adventuring outside, and all of the above at the same time!

Peter Varkonyi
Co-Owner, Executive Chef
His order is the Cubano: tender shredded pork…crunchy pickles.…tangy mustard… all bathed in melty cheesy goodness.
In store, Peter serves as head butcher, executive chef, and event & catering coordinator. He’s tapped into everything; working with an organization to put together a fundraiser, making sausage, or helping out in the kitchen - he does it all.
Outside of work, he can be found playing with their children, building something fun, or enjoying a good sporting event (F1 and hockey being his favorites).

Culinary Development
His order is the breakfast sandwich. The house-made English Muffin (made by Tim) really brings it all together.
In store, he is a culinary wizard. Initially brought on to handle the baking, this is but one of his many skillsets. In the kitchen, Tim helps with menu development, creative design, baking the most incredible treats, and pushing toward new heights.
Outside of work, you can probably find him in the woods, or water: enjoying a leisurely walk through the woods, soaking in a river, or fishing on a lake. He enjoys skating and hiking in the summer, and will be on the mountain snowboarding every winter day he can.
